[Dynamics of the bioelectrical activity of human brain during continuous work].

Electroencephalographic parameters can be used to detect early signs of fatigue which is of practical importance. Experiments were carried out on three healthy men to identify a limited number of symptoms allowing a rapid evaluation of operator's work capacity. The subjects were kept in long-term isolation. The study revealed general trends and individual variations in brain bioelectrical activities that reflected their performance during a continuous work with natural sleep deprived for three days.

[Change in the sterol and phospholipid makeup during the hydrothermal processing of buckwheat grain].

The effect of different modes of the hydrothermal treatment of buckwheat and of the grit cooking on a change in the composition of sterols and phospholipids was investigated. While not changing the qualitative composition of sterols and phospholipids, the hydrothermal and culinary treatment was found to produce some changes in the correlation of their individual fractions.

[Alteration of the biologically active substances of a lipid nature during drying of wheat grain].

The influence exerted by the temperature of the wheat grain heating when it is dried in an "elemental" layeron changes in the content of some biologically active lipid-like substances and of the lipids oxidation products was studied. It was made certain that drying at different temperatures of the grain heating tends to produce material changes in the amount of biologically active substances and the lipids oxidation products. There is observed a drop in the content of carotinoids, phospholipids, of the sum-total and individual forms of tocopherols with simultaneous accumulation of the oxidation products. With rising temperature of heating the grain that undergoes drying the said changes become ever more ostensible.

[Use of pancreatic lipase for determination of the glyceride composition of rice lipids].

The triglyceride composition of rice lipids was investigated, using methods of thin-layer chromatography, enzymic hydrolysis by pancreatic lipase and gas-liquid chromatography. The major portion of triglycerides were tri- and di-unsaturated glycerides. The content of trisaturated glycerides was not more than 0.86%. The data obtained allow the conclusion that unsaturated acids occupy 2-positions in the triglyceride molecule of rice oil and oil of other plants.
