Recovery of aroma compounds from a wine-must fermentation by organophilic pervaporation.

This study investigates the recovery of a wine-must aroma profile, formed by Saccharomyces cerevisiae during a muscatel wine-must fermentation, using organophilic pervaporation. Experiments were carried out along two independent, but organoleptically similar, fermentations. The wine-must samples and the aroma concentrates obtained were characterized organoleptically by a sensory panel and analytically with regard to eight major wine-must components: four alcohols; three esters; and one monoterpenic compound. Pervaporation performance was studied under fermentation conditions, and the permeate concentration, partial fluxes, and enrichment of the respective compounds were determined. The muscatel wine-must aroma profile was recovered purely and faithful to its origin between wine-must densities of 1075 and 1055 g L. At the beginning of the fermentation, too few aromas were present in the must for recovery. Toward the end of the fermentation, high ethanol concentrations in the wine-must caused a dramatic enrichment of two esters in the permeate, whereas other components investigated seemed unaffected. This shift resulted in an unbalanced aroma. In conclusion, it was shown that organophilic pervaporation can be highly suitable for the continuous recovery of very complex and delicate aromatic profiles produced during microbial fermentation. [The growth of the skeleton, body mass and muscle fiber diameter of the turkey (Meleagris gallopavo) from hatching to the 224th day].

Growth of body mass, femur, tibiotarsus, and tarsometatarsus length as well as the diameter of muscle fibers in the M. pectoralis were measured in (Large White) female turkeys between birth and day 224. Growth-specific approximations were established with the Janoschek function as modified by Sager (1978) and with the Logistic function. While the Janoschek function fairly described the growth of the turkey, the Logistic function throughout gave beginning values that were too high and theoretical end values that were too low. Of the five growth parameters that were measured, the diameter of the muscle fibers showed its maximal rate of growth first on day 21. The following decrease in growth rate took the following sequence: length of tarsometatarsus, femur, and tibiotarsus, diameter of muscle fibers, body mass. 99% of growth had occurred in the tarsometatarsus length on day 109, femur length on day 117, tibiotarsus length on day 138, diameter of muscle fibers on day 166, and the body mass on day 231. A comparison of this growth with that of other domestic fowl showed close relationships between the way turkeys and chickens grow.

[Contribution on the parasite fauna of the GDR. 2. Studies of the incidence of helminths in roe-deer (Capreolus capreolus)].

The authors show the results of researches on the helminthofauna in roe deers from two different hunting-grounds. The results are compared with those of other authors in GDR and the Central European region. In roe deers 37 different helminths--1 species of Trematoda, 3 species of Cestoda and 33 species of Nematoda--are found up to till now in GDR. Finally some informations are given about the extense- and the intense-infection of the hosts.

The deterioration of duck meat during storage as investigated for free amino acid nitrogen and organoleptic characteristics.

The carcasses of 8 week old Pekin ducks were stored in the refrigerator at + 5 degrees C up to 21 days. After 11 days the occurrence of free amino acids reached its maximum and then decreased to the end of the storage period. It showed a significant linear and quadratic trend. The fresh meat is rejected after 9 days of storage due to off odour at 202, 179, and 159 mg of free amino acids in the breast, thigh, and drumstick muscles, respectively. The flavour of the broiled meat indicated deterioration after 11 days of storage. At this stage slime appeared on the carcasses.
