[Microalgae Spirulina in human nutrition].

Spirulina microalgae (Spirulina platensis, Spirulina maxima, Spirulina fusiformis) is considered as a valuable additional food source of some macro- and micronutrients including high quality protein, iron, gamma-linolenic fatty acid, carotenoids, vitamins B1 and B2. In spite of Spirulina chemical composition varies widely when grown in open reservoirs its efficiency as an additional remedy in treatment and prophylaxis of different diseases is proved in a variety of experimental and clinical trials. During Spirulina cultivation in open reservoirs and especially in closed photobioreactors its biomass may be additionally enriched with some trace elements such as iron, iodine, selenium, zinc, copper, manganese and chromium in high bioavailable form. Said biomass is considered as a constituent of new bioactive food supplements.

[The biological value of the proteins of dairy products with varying contents of lactose].

In experiments on growing Wistar male rats biological value of proteins was estimated in 5 milk products containing proteins: "Detolact", "Humana O", "Novolact MM", lactalbumin and "Dialact" containing from 17 to 58% of lactose. The final level of lactose in the ration (7% of protein by mass) varied from 4.4 to 30.6%. The parameters of protein biological value in the tested products did not significantly differ from those of the control protein (casein) that has proved the validity of using rats for investigation of biological value of proteins in the rations containing up to 30% of lactose.

[Research on xenobiotic metabolism for assessing the quality of protein-containing products from plant raw material produced through biotechnology methods].

Activity of microsomal hydroxylation and conjugation enzymes was studied in the liver of rats that received food concentrate of protein from sunflower groats (SPC) produced in the USSR, and soya protein isolate (SPI) produced by Ralston Purina, USA. SPC consumption during 3 months was attended by elevation of cytochrome-450 content, and activity of microsomal hydroxylation and uridinephosphate-glucuroniltransferase (UDP-GT) in hepatic microsomes, that may evidence the presence in SPC of chemical compounds of natural origin, or chemical modification of the own amino-acid products. SPI did not influence activity of microsomal hydroxylation enzymes, but it raised UDP-GT activity. Both protein products produced no effect on activity of enzymes associated with glutathione metabolism--glutathione-S-transferase and glutathione-reductase in hepatic cytosol. However, SPC and SPI induced a manifold rise in glutathione-peroxidase activity in cytosol of the liver and blood that indicates the presence of the trace element selenium in the products studied.

[The action of different food factors on the lipid peroxidation processes in the liver microsomes of rats].

Three series of experiments were conducted to study the effects of varying food factors on lipid peroxidation (LPO) activity in rat liver microsomes. The food rations contained heat-treated sunflower oil, soybean protein isolate, krill protein concentrate. A long-term intake of heat-treated oxidation products was attended by significant activation of LPO in the enzymatic system, by elevation of cytochrome P-450 level, by increased activity of ethylmorphine N-demethylase and aniline n-hydroxylation. The period of half-inactivation of cytochrome P-450 was significantly shortened in NADPH-dependent LPO. The rate of NADPH-dependent LPO was not significantly different in the animals given equal amounts of soybean protein isolate or casein (control). Activation of NADPH-dependent LPO and induction of cytochrome P-450 were recorded in liver microsomes of the animals given krill protein. The high concentration of cytochrome P-450 (in the homogenate and microsomes) correlated with the acceleration of hydroxylation of standard substrates ethylmorphine and aniline.

[Effect of long-term consumption of various krill products on lysosomal proteinase activity in rats].

Total and nonsedimentable cathepsin A, B, C and D activity was studied in the liver and kidneys, as well as in the blood serum of rats fed with rations containing protein isolate from krill (100 and 50%) and krill flesh (100%) during .6 and 12 months. Selective activation of cathepsins A dn D in the liver, intensified nonsedimentable activity of all lysosomal proteinases studied, most manifest at the initial stages of the experiment (4 months), and a sharp (0.5-3.5-fold) rise of these enzymes' activity in the blood serum were recorded in rats when the krill isolate served the only source of protein (100%) in their ration.

[Lysosomal hydrolase activity in the rat liver and serum depending upon the quality of dietary proteins].

Activity of lysosomal hydrolases cathepsins B, C, D and acid phosphatase was studied in liver tissue and blood serum of rats, ration of which contained 18% and 36% of the sunflower protein concentrate within one and three months. The control animals were maintained on rations with corresponding amount of casein. Activity of the proteinases studied tended to decrease in liver tissue of experimental animals, whereas activity of cathepsins C and D differed from the initial level after 3 months on the experimental diet. These alterations were dissimilar in blood serum: activity of cathepsin C was decreased within 1 month, while the enzyme activity as well as that of acid phosphatase was increased to the end of the experimental period (3 months). The data obtained suggest that lysosomal enzymes are sensitive to alterations in qualitative composition of the ration proteins; this property of the enzymes may serve as a criterion in medico-biological evaluation of new proteins in foodstuffs.

[Biological value of fish protein isolates of the Marinbeef type].

Two samples of fish protein (made in Japan) obtained from fish of different fattness: walleye pollock ("arinbeef W") and sardine ("Marinbeef R") were studied. The biological value of these protein products was estimated with varying methods. In experimental rats fed with diets, containing the "Marinbeef" samples as the only source of protein (10% according to their calorific value), growth (PER and NPR) and balance (NPUtr) parameters of biological value, nitrogenous equilibrium (delta N +/- g/day) and actual assimilation (Dtr) of the proteins were assayed. The activities of aminopeptidase, creatine phosphokinase and the creatinine content were also studied in the rats' blood serum. The biological value of both "Marinbeef" products was found to be higher as compared to casein, and "Marinbeef W" values were higher than those of "Marinbeef R". No difference in the leucine amino-peptidase activity was revealed between the groups fed with different fish proteins, this activity being lower, while that of creatine phosphate higher as compared to the control group, although the difference was unauthentic (p greater than 0.05). The creatinine content did not differ from that in controls. "Marinbeef W" was assimilated better than "Marinbeef R".

[Effect of the consumption of krill protein isolates on lysosomal proteinase activity in rats].

A study was made of the total and nonsedimented activity of 4 lysosomal proteinases in the liver, kidneys and blood serum of rats fed for 4 months krill protein isolate (AtlantNIRO) as the only source of protein or that replaced by 50% with a control protein (casein) contained by the 18% protein (in terms of caloricity) diet. The use of the krill isolate as the only source of protein brought about a significant increase in the total activity of cathepsin A and cathepsin D and in nonsedimented activity of cathepsins A, D, B and C in rat liver (by 95, 23, 32 and 50%, respectively). Meanwhile in the kidneys, there was an increase in the total activity of cathepsins A and D. Proteinases A, D, B and C were activated in the blood serum. The 50% replacement of the krill isolate by casein elicited a substantial decrease in the adverse effect of the krill protein isolate on metabolic processes in rats.

[Biological value of various types of dietary soy bean proteins].

Chemistry and experiments on animals (male Wistar rats) were made to determine the biological value of 4 samples of soybean proteins: 2 protein isolates (Ardex SP-6 and Ardex-M, ADM USA); soybean protein concentrate (UNICO, UNIMILS, Holland), and textured soybean concentrate (manufactured by the All-Union Research Institute of Fat). The content of essential amino acids and amino acid score of the protein samples were measured relative to three standard aminograms. The "growing" (the protein efficacy ratio and net protein ratio) and balance (net protein utilization) characteristics of the biological value were determined in experiments on rats fed diets containing soybean proteins as the only source of proteins (10% of caloric value). The Dtr of the proteins under study was defined. All the evaluable proteins were found to be almost similar as regards the biological value. The Dtr of protein isolates was discovered to be higher as compared to that of soybean protein concentrates.

[Toxic effect of methanol under conditions of complete and deficient protein nutrition].

In experiments with albino rats receiving complete and protein-deficient nutrition the effect of different doses of methanol (10,100 and 500 mg/kg) administered daily per os for a month was studied. Methanol was shown to display toxic hepatotropic action, producing in the liver a focal proteinic degeneration of the hepatocytic cytoplasm, causing changes in the activity of some microsomal enzymes and enlarging the average size of hepatic cells (early age-specific changes). The damaging action of methanol manifested itself in a particularly distinct fashion by depressing the synthesis of DNA, when used in large doses and against the background of a protein-deficient ration.
