[Sanitary conditions for the production of beef cattle in Argentina].

Meat production is extremely important for the economy of Argentina, and represents 35%-40% of all national agricultural production. Cattle are distributed throughout the country, with the highest density in the Pampa region, which hosts 66% of the national herd and produces 80% of the total meat production in Argentina. This region has a long tradition of livestock rearing, and the practice of rotation between agriculture and animal husbandry ensures an ecological equilibrium. Meat production in Argentina is based on the exploitation of natural resources, with traditional extensive grazing, which offers advantages when compared with other countries. The composition of meat depends on factors such as breed and age, and on the diet of the animals. The authors demonstrate that meat produced under extensive grazing conditions in Argentina has less intramuscular fat and cholesterol than that produced in intensive systems which have a grain-rich diet. The authors analyse the situation of the country with regard to diseases which can be transmitted by meat and which might affect public health, particularly bovine spongiform encephalopathy (BSE), brucellosis, tuberculosis, salmonellosis, campylobacteriosis, colibacillosis and taeniosis. The fact that Argentina is free from BSE is emphasised, and the prevention programmes which have been implemented to control other diseases are described. In addition, the authors discuss tests which are conducted to detect the presence of residues of chemical contaminants in meat. Emphasis is given to the quality of infrastructure, equipment and operation of the mechanised meat-processing plants, which guarantee the hygienic safety of the products. The authors conclude that meat and meat products from Argentina offer a high level of safety for consumers.

Presence of zoonotic campylobacters in cattle and swine for consumption in Argentina.

The first isolation of zoonotic campylobacters in Argentina is described. Samples from intestinal contents and swabbing of carcasses of clinically healthy cattle and swine destined for consumption were analysed. In cattle, isolations of C. fetus subsp. jejuni and C. sputorum were made from intestinal content samples (1.7% and 6.9% respectively for each species), and only the former species was isolated from carcass swabbing samples (3.2%). Isolations in swine were made only from intestinal contents (6.9%). We discuss the significance of these isolations in relation to the role the animal species studied play in the epidemiological chain of this zoonosis.

[Isolation and quantification of Salmonella in the waters of the Río de la Plata destined for recreation].

Thirty three samples from recreational waters from different areas of Río de la Plata were tested for Salmonella (Fig. 1). A 200 ml sample filtered through a diatom bed as well as 2 and 20 ml samples without filtering were studied using a simple and economical technique. The isolation probability was directly dependent on the water volume analyzed. Best results were obtained when tetrathionate broth with novobiocin and Salmonella shigella agar were used (Table 3). Salmonella was isolated from 36% of the samples studied and 12 serotypes were identified (Table 5). The relation between the NPM of each bacteriological indicator used and the NPM of Salmonella are shown in Table 4. Correlation values were calculated by relating mean point logarithms of the classes in Table 4 with the isolation percentages of Salmonella for each class. These values were low, except for fecal Streptococcus (R2 = 0.94). The high density of fecal coliforms found in Bagliardi and Pescadores Beaches (rarely less than 10.000 bacteria/100 ml) and the incidence of Salmonella, lead us to conclude that these waters are unsafe for bathing and swimming, specially for children, according with the international recommendation on the quality of recreational waters. Waters with the characteristics described here should be periodically analyzed for Salmonella concentration. The lack of correlation values between the MPN of total and fecal coliforms and the MPN of Salmonella, also supports this advise.
