Diet and exercise in middle-aged men.

Effects of an anaerobic exercise program on serum lipids and lipoproteins in sedentary male subjects were studied for 12 weeks. No dietary changes were made, and individuals were encouraged to maintain their body weight. Increase in lean body weight, decrease in percent body fat, and unchanged total body weight occurred in subjects participating in the resistive weight training program, while the men's serum cholesterol and low-density lipoprotein-cholesterol decreased and their high-density lipoprotein-cholesterol increased. Lipid profile improvements were attributed to exercise.

Effects of zinc deficiency on dental caries in rats.

The effects of graded levels of dietary zinc on the development and mineralization of teeth and bones and on the susceptibility of teeth to dental caries were studied in young growing rats. Thirty-six weanling male Sprague-Dawley rats were randomly assigned to four dietary treatments: 1) zinc-deficient, less than 1 ppm; 2) 12 ppm zinc; 3) 36 ppm zinc, and 4) 108 ppm zinc. For treatments 2, 3 and 4, rats were pair-fed the quantity of feed consumed by their individual counterparts fed the zinc-deficient diet. After 4 weeks of treatment, growth retardation along with other clinical zinc deficiency signs were observed in rats fed the zinc-deficient diet. The zinc levels in bones and teeth of zinc-deficient rats were lower than those for rats fed supplemental zinc. Increased dietary zinc resulted in greater levels of zinc in bones and teeth, but the levels of calcium decreased. Greater incidences of enamel lesions in mandibular molars were observed in rats fed the zinc-deficient diet than in rats pair-fed zinc-supplemented diets. Furthermore, the effect of zinc deficiency on dental caries of young rats was predominantly at the smooth surfaces of the molars. Dietary zinc may be an important trace mineral in the process of post-eruptive mineralization of the enamel and may reduce the susceptibility of teeth to caries.

Fortification of hamburger with calcium, vitamin A, and ascorbic acid.

Patties were prepared from ground beef--some with and some without calcium, vitamin A, or ascorbic acid, either singly or in various combinations. After cooking, the patties were mixed with buns and mayonnaise, ground, and then fed to weanling rats. No single added nutrient or combination of added nutrients seemed to affect flavor, texture, or cooking losses of fat or water. Fortification with calcium and ascorbic acid increased liver storage of vitamin A and decreased liver:body weight ratios.

Nutritional status of black preschool children in Mississippi. Influence of income, mother's education, and food programs.

The nutritional status of 247 black preschoolers in two counties of Mississippi was studied by relating caloric and nutrient intakes and anthropometric measurements to homemaker's education, family income, and participation in Food Stamp and donated food programs..23AUTHOR Low intakes of calories, iron, calcium, vitamin A, and ascorbic acid were found in many of the children, regardless of the variable considered. These findings--in comparison with similar studies--imply that, as time passes, low education and income are having less impact on child nutrition. This ameliorating effect may be due to programs designed to educate parents and extend purchasing power of food dollars. Thus, it seems advisable to continue these programs.?23AUTHOR

Hydroxyproline index: an indicator of nutritional status. Study of Mississippi children.

The hydroxyproline index was used to evaluate nutritional status of four- to five year-old black children in two Mississippi counties. Positive partial regression coefficinets were highly significant for weight in both counties and significant for height in one. These data seem to confirm results of other workers that changes in the index may reflect change in body weight rather than in hydroxyproline; creatinine ratio. Eighty per cent of the children had high serum gamma globulin levels suggesting infection, which has been shown to cause a high degree of variability in hydroxyproline excretion. Results indicate that hydroxyproline index may not be a valid indicator of nutritional status for this popualtion group.
