[Bioavailable fluoride in poultry deboned meat and meat products].

UNLABELLED: Deboned poultry meat (MDOM) consists of meat and fat and may also contain pieces of bones. This type of meat is a raw material used for production of different kinds of sausages. The aim of our investigation was to determine whether MDOM could be the significant source of bioavailable fluorine. Sample of MDOM and poultry meat products were digested in 37 degrees C water bath shaker with pepsin and 0.1 M HCl and then neutralized by adding carbonate and digested with pancreatine. Measurement was performed by ionoselective fluoride electrode. Fluorine determined in prepared samples is potentially ready to be absorbed by organism. Nine kinds of MDOM and eight poultry meat products were investigated. Content of fluorine in MDOM ranged 0.3-2.7 mg/kg of fresh weight but in one sample of turkey meat--7.4 mg/kg, while determined content of fluorine in poultry meat was low--not exceeded 0.2 mg/kg. Sausages prepared from homogenated meat contained fluorine from 0.5 to 0.7 mg/kg. In products prepared from big pieces of meat the content of fluorine was lower. CONCLUSIONS: MDOM is characterized by higher level of bioavailable fluorine than muscle tissue. MDOM in poultry meat products may be a source of higher fluoride content.

[Usefulness of an immunoassay test TRAIT for detection of genetically modified Roundup ready soybean in food products].

The test based on immunoassay TRAIT Test for the specific detection of Roundup Ready Soybean was used for reference material in the form of dried powdered soy beans contained 0, 0.3, 1.25, 2.5% of genetically modified material, for soy beans declared as Roundup Ready and for soy products from Warsaw market. The detection limit was approximately 0.1% GMO on dry weight basis. Experiment was also carried out on heated soybeans. The positive results was obtained since temperature was under 65 degrees C during 15 minutes of heating grounded beans; above this temperature specific protein was not recognisable by the antibody. The TRAIT Test should be regarded as a qualitative method and could be recommended for screening purposes. Investigation demonstrated that above mentioned test was useful for detection of protein of genetically modified soybean in unprocessed products.

Recognition of seed varieties using a temporal organisation map analysis of electrophoretic images.

This paper presents a method for seed varieties recognition using one-dimensional electrophoresis gels. It employs a neural network basically constituted of temporal organisation maps (TOM). The TOM model is a neural net which was initially developed for speech recognition. It can be trained to recognise words in speech by reference to the sound pattern over a sequence of time steps. Electrophoresis creates a set of bands in the gel, caused by migration of protein from the seed. Each seed variety generates a characteristic pattern. The bands are made visible by staining. They can then be imaged and digitised to create an input to a TOM, which treats the variation with distance along the lane in the same way as the time sequence for which it was originally employed. In this way the characteristic signature of a seed variety can be recognised. A set of 50 images--each containing 10 to 15 lanes--was used to train and test the performance of a neural network in recognising 75 cereal varieties. The network could achieve a recognition rate of 98%, provided that the gel was not distorted or cracked during heating or drying. Details of the design and training of the network are given.

[Fluorine in vegetables and potatoes from the market in Warsaw].

In 65 samples of vegetables: cabbages, carrots, beetroots, onions and potatoes, of whose consumption is the highest in Poland, fluorine content was determined. The samples were prepared according to AOAC method, and fluorine concentration was determined in the filtrate by the potentiometric method using a Fluoride--selective electrode--model 920A of Orion Research Inc. The recovery rate of fluorine was 95 +/- 5%. The average level of soluble fluorine ranged from 3.36 mg/kg of dry weight of cabbage to 5.37 mg/kg of dry weight of onion and from 0.38 mg/kg of fresh weight of cabbage to 1.02 mg/kg of fresh weight of potatoes. In over 50% of the investigated samples fluorine content exceeded 0.56 mg/kg of fresh weight, which is the upper limit value of fluorine content found in the vegetables from the areas ecologically clean.

[Hair colorants].

The properties, mode of action and its duration of the preparations used for hair dyeing are described, together with their chemical components, and also preparations of herbal origin. The chemical reactions are described in detail which lead the development of a color polymer occurring during hair dyeing. The studies are presented which are used for toxicological assessment of the raw materials which are the components of the colorants, and the list is included of hair colorants permitted for use in Poland.

[Nitrilotriacetic acid (NTA)--properties and environmental behavior. II. Ecotoxicity and biodegradability of NTA in the environment].

The results are described of studies on the effects of NTA on aqueous organisms and crops. The results show that NTA at concentrations determined in natural water systems causes no disturbances of the equilibrium in ecosystems. The conditions of the NTA biodegradation process in communal sewage and in surface waters and the effects of the processes taking place in water treatment systems destined for providing drinking water on NTA degradation are described. In a summary of the results of monitoring studies conducted in countries where NTA has been accepted for widespread use in washing powders the problems are stressed which will require solving before the decision is made of permission of NTA use in Poland. As of now, there are no full data making possible permission of using NTA in products of household chemistry.

[Nitrilotriacetic acid (NTA)--properties, distribution and behavior in the environment. I. Chemical and toxicological properties of NTA].

The reason of the interest shown in the properties of NTA is the possibility of its use for the replacement of polyphosphates in washing powders which are the cause of water eutrophization. In the light of literature data the chemical properties of NTA and the conditions influencing the course of the reaction of complex formation with metal ions in aqueous solutions are discussed Equilibrium constants of these reactions are presented, with diagrams obtained in computer assisted analysis of the conditions of equilibrium of NTA reaction with metal ions in the solutions occurring in physiological conditions and in the environment. On the basis of the opinions of expert committees the toxicity of NTA for mammalian organisms are described. It has been shown that NTA has no teratogenic or mutagenic action, however, in 2-year observations of mice and rats the intake of NTA produced lesions of uroepithelium with development of tumours. This effect of NTA has been demonstrated to be closely connected with its property of complex formation with metal ions. Experiments are described in which confirmation was obtained of the hypothesis that pathological lesions of renal tabules are caused by accumulation of zinc and bladder tumours are caused by binding by NTA of calcium from epithelial cells.

[Effect of histamine application on diamine oxidase activity in kidneys and histamine level in urine].

Histamine or cadaverine or both amines jointly were given to guinea pigs for 7 weeks. The histamine content was determined in urine and the diamine-oxidase activity in the kidneys. Histamine excretion by the kidneys occurred 4 hours after introduction of the amine into the stomach. In the animals receiving histamine the activity of diamine-oxidase was greatly enhanced.
