Effect of processing on dietary fiber content of cereals and pulses.

Total dietary fiber (TDF), insoluble dietary fiber (IDF) and soluble dietary fiber (SDF) content of rice, wheat, sorghum, maize, ragi, bajra, whole grains of pigeonpea, chickpea, green gram and lentil as well as their dehusked split dhals were analyzed. Cereals except rice flours were made into chapati (unleavened bread), while rice and dhals were cooked in a pressure cooker. After the processing, IDF and SDF contents of these foods were also analyzed. Among the cereals, rice had the lowest TDF (4.1%) and wheat had the highest (12.5%). TDF content of whole pulses ranged from 15.8% in lentil to 28.3% in chickpea. IDF as % of TDF constituted 85 to 89% in whole pulses. Dehusking of pulses into dhals decreased TDF and IDF contents significantly. Among the dhals, green gram dhal had the lowest (8.2%, 6.5%) and chickpea dhal (15.3%, 12.7%) had the highest TDF and IDF contents, respectively. Processing of cereals had no effect on their TDF and IDF contents, with the exception of ragi, where a significant increase in TDF and IDF was observed. Cooking of dhals brought about a significant increase in their TDF and IDF contents.

Nutrient composition and biological evaluation of mesta (Hibiscus sabdariffa) seeds.

Two varieties of mesta (Hibiscus sabdariffa) seeds were analysed for their proximal composition. Their protein (18.8-22.3%), fat (19.1-22.8%) and dietary fiber (39.5-42.6%) content were found to be high. The seeds were found to be a good source of minerals like phosphorus, magnesium and calcium. Their lysine and tryptophan contents were also high. Sulphur containing amino acids were limiting in this seed protein and the chemical score of mesta seed protein was 40 and 57 for AMV-2 and Bhimili-1 varieties respectively. Mesta seed oil is rich in unsaturate fatty acids (70%), of which linoleic acid constituted 44%. Weanling rats were fed with 10% mesta seed protein before and after cooking for 4 weeks. Food intake of animals receiving raw mesta seed diets was significantly lower than those receiving cooked mesta seed diets as well as the casein control diet. Protein and dry matter digestibilities of raw and cooked mesta seed diets were lower than that of casein control diet. Cooking improved the food intake, gain in body weight, dry matte and protein digestibility of mesta seed diets. PER and NPU of cooked mesta seed diets were significantly higher than the corresponding raw diets. These results indicate that cooked mesta seed protein is of relatively good quality.

Nutrient composition and biological evaluation of defatted tomato (Lycopersicum esculentus) seed cake.

Defatted tomato seed cake was analysed for its nutrient composition and its protein quality was evaluated in 21 day old male rats. The cake is found to be rich not only in protein (40%), minerals like phosphorus, calcium and magnesium but also in crude fiber. Lysine content of the cake protein was in the range of that found in groundnut cake protein. Sulphur containing amino acids were limiting in this protein. However, the protein quality of the cake, as judged by PER and NPU, was relatively lower compared to that of groundnut cake. Its high lysine content (5.1 g%) will be of help to improve the cereal based farm animal feed quality.

Ulnar nerve compression by heterotopic ossification in a head-injured patient.

Although heterotopic ossification (HO) at the elbow is a frequent occurrence following head injury, nerve compression by heterotopic bone is quite rare. We report the case of a 22-year-old woman with head injury and well-documented HO at the left elbow who developed signs and symptoms of an ulnar neuropathy four months after her original injury. Electrodiagnostic studies confirmed the presence of a severe ulnar nerve lesion at the level of the elbow. Anterior transposition of the left ulnar nerve showed the nerve to have been compressed by heterotopic bone.
