A study was made of factual nutrition, energy consumption and the disease incidence among women teachers and research workers. The diets of these women were marked by excess caloric value (16-21% above normal) at the expense of high protein consumption (15-30% above normal), including animal proteins (20-40% above normal), total fats (14-40% above normal) and carbohydrates (11-22% above normal) and by the lack in the diet of vegetable fats, vitamins A and C, and calcium. Analysis of the disease incidence demonstrated that 16% of the women suffer from cardiovascular diseases, 5% from gastrointestinal diseases, 17% from overweight and 20% from obesity.
The effect of the iron-deficient diets on osseous tissue formation was studied in long-term experiments. During intense growth, iron deficiency led to a decrease in the content of hexosamines, in the activity of phosphomonoesterase I and calcium, delay in collagen maturation in the femoral bones, as well as to phosphorus-calcium metabolic disorders. Histological examination revealed thickening of the articular cartilage, an increase in the number and volume of osteocytes, islets of the proliferative osteocytes on the part of the endosteum, and a number of dystrophic abnormalities.
The authors studied several groups of children in terms of the height in endemic goiter regions and in the regions with no goiter incidence. Subject to study were also processes of osteogenesis and phosphocalcium metabolism in animals with iodine deficiency in the diet. It was established that in goiter endemic regions, the number of children under medium and of low height was increased while that of medium and over medium height, and the number of tall children were reduced. It was also found that iodine deficiency in the diet of animals entailed abnormalities in the growth patterns, destructive alterations in the bones and bone marrow, a decrease in the content of hydroxyproline, hexosamines, and in the activity of phosphomonoesterase-I in animal bones, as well as disorders of phosphocalcium metabolism.
A study was made of energy losses, the nutrition pattern and metabolic processes in 384 drivers of urban passenger transport. It was found that energy losses amounted to 3000 kcal (for men) and to 2550 kcal (for women). It was demonstrated that in the subjects examined, the nutrition caloricity was not balanced.
The nutrition pattern and disease incidence were studied in 9634 schoolchildren with varying body lengths. A direct correlation was established between the body length and energy value of nutrition, the content of basic food, macroelements and trace elements, vitamins A and B. Tall schoolchildren were shown to have a greater incidence of obesity, chronic tonsilitis, rheumatic fever, enuresis, abnormal posture and scoliosis. The biogeochemical provinces with endemic fluorosis and goiter were disclosed to have the increased number of children below medium height and of low height, which is accounted for by the deficient content of fluorine and iodine in the environment.
Energy losses, actual nutrition work fitness and metabolism were examined in 309 operators. It was found that energy losses in the operators were equal to 2724 kcal, while energy requirements did not exceed 3000 kcal/day. Actual nutrition of the test subjects was not adequate as regards the consumption of animal proteins, vegetable oils, vitamins A and C. Control panel operation produced marked shifts in the function of the central nervous system and cardiovascular apparatus of the operators. Disorders of lipid and vitamin C metabolism were also recorded.
Chemical composition, energy value and 137Cs and 90Sr content in daily diets were assessed in rural population from the region controlled after the Chernobyl accident. As shown by low urine excretion of vitamins (thiamine, ascorbic acid, riboflavin, N1-methylnicotinamide), the population suffer from vitamin deficiency, especially in winter and spring. Levels of the radionuclides rose 1.3-19.7 and 3.4-24.8-fold for 137Cs and 90Sr, respectively.

Investigations made it possible to establish that in the period from 1925-28 to 1970-71 there took place in the Ukraine an increase in the consumption of animal products (milk, meat, fish, eggs), of sugar, vegetables, fruits and a fall in the consumption of cereals (bakery products, grits, macaroni, beans) and potato. Because of these dietary changes in the nutritional pattern of the population there were noted an elevated proportional share of proteins and fats, basically of animal origin, and a decrease in that of complex carbohydrates. A direct relation between the health status of the population and its alimentation has been ascertained; first--between the calorific value of the food products sets and their fat and carbohydrates content, on the one hand, and the body weight of the examined, on the other; and secondly--between the fluorine level in the food and the prevalence of fluorosis, caries, exostosis, aggravated by an imbalance of a number of nutritional components, on the other. Note has been taken at the same time of the fact that obese individuals suffer more often from cardio-vascular affections, gout, uro- and cholelithiasis and diabetes mellitus.
