Flavor generation during extrusion cooking.

Extrusion cooking is a high temperature-short time process which is ideal for the production of flavor volatiles. However, due to the nature of this process there are many opportunities for these volatiles to be lost. This has led many researchers to study the formation and retention of volatiles during extrusion. This review will focus on-the flavor related reactions which may occur during extrusion and their occurrence in various flours and due to the addition of reactive precursors.

Nonenzymatic deamidation of food proteins.

Many cereal proteins, such as wheat, corn, and oat proteins, have high levels of the amide-containing amino acids, glutamine and asparagine. These side chains are susceptible to hydrolysis of the amide bond, which leads to release of ammonia and transformation to acidic groups. The released ammonia has been implicated in the formation of aroma compounds and pigments because of its participation in the Maillard browning reaction. The conversion of the amide groups to acid groups may partially unfold the protein, resulting in an amphiphilic molecule that can be used as a surface active agent or emulsifier by food processors. This review provides general information on the factors that affect deamidation of proteins as well as the implications of deamidation for food processing.

New medium for the isolation and enumeration of pseudomonads.

A new medium containing 200 ppb of 2-hydroxy-2',4,4'-trichlorodiphenyloxide (CH3565) and 10 ppm of cetyl-trimethyl-ammonium bromide (Cetrimide) in tryptic soy agar was developed and tested with 19 pure cultures of Pseudomonas, 20 microorganisms of other genera, commercially prepared ground beef, and laboratory-prepared inoculated ground beef. The new medium, CETCH agar, was compared with an antibiotic-containing medium. CETCH agar provided greater pseudomonad recoveries, a shorter incubation period prior to plate counting, and greater ease of preparation.
