[Effect of an egg-milk-vegetarian diet on nutritional and blood status. II. Findings of a study on circulation, blood status; discussion].

Blood analyses were performed concerning glucose, uric acid, potassium, total protein, s-GOT, S-GPT, total cholesterol, HDL-, LDL-cholesterol, triglycerides, iron, ferritine, iron binding capacity (IBC), hemoglobin, thiamine, riboflavin, ascorbic acid. Significant changes with regard to improving blood levels at the end of period L, compared with the initial position, could be registrated for the following parameters: uric acid, s-GPT, HDL-, VLDL-cholesterol, triglycerides, IBC, thiamine, ascorbic acid. In both periods, the food volumes actually eaten served basically for the comparison of clinical-chemical parameters. Only a few subjects with inconvenient blood levels had an inadequate intake of the nutrient that was to be correlated with a blood parameter. On the other hand, every blood parameter showed subjects with levels above the average of the group, but averaging, at the same time, far beyond the group's nutrient supply.

[Effect of an ovo-lacto-vegetarian diet on nutrition and blood status. I. Method, food consumption, administration of nutrients and anthropometry].

The purpose of the study was to investigate the physiological assessment of a lacto-ovo-vegetarian diet, in comparison to a usual mixed diet and to analyse the effect of a lacto-ovo-vegetarian diet on nutritional status and blood parameters. Following an initial study, 34 resp. 33 subjects, three of them male took part in two investigation periods each lasting three weeks. During the first period (N) the subjects ingested the normal mixed diet, while in the second period (L) they were fed a lacto-ovo-vegetarian diet. The female subjects were aged 52.6 +/- 14.3 years, the male subjects 47.7 +/- 12.7 years. In both periods food supply ensued from the central kitchen of a nunnery. While preparing the meals, the food intake and the amount of nutrients was assessed with precise weighing methods. Also, the individual food consumption of the total subjects was estimated using food records. The nutritional physiological evaluation was based on the daily consumption of energy and nutrients to assess the nutrient supply, by means of the recommended dietary allowances of the German Nutrition Society. At the beginning of period N and both at the beginning and the end of period L, blood tests of the following parameters were performed: serum glucose, uric acid, and potassium, total protein, total cholesterol, HDL-, LDL-, VLDL-cholesterol, triglycerides, serum ferritin, serum iron, iron binding capacity, hemoglobin, s-GOT, s-GPT, thiamine, riboflavine, ascorbic acid. Measurements of body weight and height, body composition, skinfold thickness, circumferences, body surface, relative weight, blood pressure and sitting pulse rate completed the investigations. Furthermore, meal frequency and the daily individual energy requirement of the subjects were assessed by means of a diary of energy expenditure. On average, the daily energy consumption of women was 2020 +/- 611.3 kcal in period N, and 1970 +/- 592.4 kcal in period L. Consequently, there was a covering of energy requirements of 103% in period N and 99% in period L. Sources of energy consisted of 14% protein, 36.4% fat and 49.6% carbohydrates in period L, 13.6% protein, 39.6% fat, 44.7% carbohydrates and 2.1% alcohol in period N.

Historic changes of occupational work load and mortality from peptic ulcer in Germany.

The occurrence of peptic ulcer disease appears to be associated with the amount of occupational work load. Worldwide the number of hospital admissions, surgical operations, and death rates from gastric and duodenal ulcer have declined during recent decades. This communication examines the probability of a correlation between the time trends of gastric and duodenal ulcer mortality in Germany and changes in the occupational work load between 1870 and 1984. Lifetime cumulative hours of work declined for all consecutive cohorts of the population born between 1840 and 1955. The fall occurred similarly in all age groups. However, lifetime cumulative energy expenditure originating from industrial blue collar work showed a peak for the cohorts born during the last quarter of the 19th century. A marked decline occurred in all cohorts born after 1905. A similar birth-cohort pattern was found for mortality from peptic ulcer disease, with those born at the turn of the century showing a higher risk of dying from peptic ulcer disease than any previous or subsequent generation. The coincidence of the birth-cohort patterns of both mortality from peptic ulcer and occupational energy expenditure suggests that birth-cohort pattern of peptic ulcer may be related to the trends of occupational work load that occurred during the industrial revolution. The amount of work hours appears to be a less sensitive measure for the occupational work load. The superimposition of two counteracting historic changes, namely the increased industrial work force and the decreased occupational work load due to legislative regulations, industrial automation, and mechanization may have shaped the rise and fall in the occurrence of peptic ulcer disease.

[Reduction of body weight on diets with high butter or margarine content. II. Effect on blood lipid levels].

The effect of a fat-modified reduction diet with predominantly butter (diet T) respectively margarine (diet P) on the lipid metabolism was studied. The study was carried out on 30 subjects over two periods each lasting 21 days. An improvement of serum cholesterol and -triglycerides, LDL- and VLDL-cholesterol was found regardless of the diet. The proportion of HDL in serum cholesterol increased, the atherogenic index was improved.

Butter

[Effect of a diet formula with high butter or margarine content on body weight reduction].

The effect of a fat-modified diet with 1100 kcal (4600 kJ) on the reduction of body weight and body fat was studied. A low-carbohydrate, high-fat diet with predominant animal fat (diet T) was compared with a low-carbohydrate, high-fat diet with predominant vegetable fat (diet P). Diet T was composed of 52.1% of the energy as fat, 20.7% as protein and 27.2% as carbohydrates. Diet P was composed of 54.1% of the energy as fat, 18.9% as protein and 27.0% as carbohydrates. More than two-thirds of the fat in diet T was butter, in diet P margarine. The study was carried out with 30 subjects (8 men) over two 21-day periods. With diet T, men had a mean weight loss of 7.1 kg = 338 g/d, of which 3.2 kg = 152 g/d were proved to be body fat, while women had a mean weight loss of 4.4 kg = 210 g/d, of which 2.3 kg = 110 g/d were proved to be body fat. With diet P, men had a mean weight loss of 7,6 kg = 362 g/d, of which were 3.9 kg = 186 g/d body fat, while women lost 3.8 kg = 181 g/d of body weight on average, of which were 2.0 kg = 95 g/d body fat. An improvement of blood pressure was also found. Significant differences of the reduction of body weight and body fat between the diet with mostly animal fat and the diet with mostly vegetable fat were not found.

Various survey methods have been used in estimating the dietary intake of individuals, families and other groups. Every method has its advantages and disadvantages, and its practical, financial and technical difficulties. The choice is also limited by the quality of the population studied. The nutrient level is shown by many parameters: Cholesterol level, thiamine intake, uric acid level, ascorbic acid level in plasma, SO2-intake. Field studies were done with different groups of the population: pupils, elderly people living in homes, heavy workers, sedentary workers, clerks, policemen, sportsmen, students. SO2-intake is related with thiamin intake. It is very different from group to group (0,05--47,7 mg)/thiamin.

[Differences in energy expenditure for selected activities under controlled and uncontrolled conditions].

Experiments with the Max-Planck respirometer were made to determine the energy expenditure. 4 kinds of comparable tests were made under standard conditions and ad libitum individual: walking on solid, level ground with light clothing, in high lace boots (walking-speed 5 km/h), walking with 10 kg resp. 20 kg load on level, solid ground (running speed 10 km). The energy expenditure under standard conditions is much higher than in the working-elements ad libitum speed and distance. Many persons overestimate their personal energy expenditure which is a reason for a positive energy balance succeeded by overweight.

[Findings in quality controls of ocean fish in the Siegen district].

In quality tests on traded sea-fish, 30 fresh fish- and 20 quick-frozen fish specimens were tested for their TVB-N content, TMA-N content, as well as for TMAO-N, and were subjected to a sensorial test. Equal portions of codfish- and perch fillets were tested. According to the chemical analytic data, 13 specimens of the fresh fillets proved to be unobjectionable commercial merchandise 17 specimen had to be eliminated as being spoiled, since part of the above values for TVB-N and TMA-N had been considerable exceeded. The results differ enormously between the two species of fish. The perch fillets showed a significant better quality condition than the specimens of codfish. In the sensorial test the objective total result was confirmed in the main. On the basis of the chemical findings one specimen of codfish out of the deep-frozen fillets had to be objected. 16 fillet-specimens could sensorially be approved as being commercially marketable, 4 were tested not for sale. With codfish showing considerable better results than perch.
