Determination of mineral and trace elements in some medicinal herbs and their infusions consumed in Turkey.

Fourteen mineral and trace elements (Al, Ba, Ca, Cd, Co, Cr, Cu, Fe, Mg, Mn, Ni, Pb, Sr and Zn) were determined in the herbs and their infusions consumed for medical purposes in Turkey such as chamomile (Matricaria chammomile L.), fennel (Foeniculum vulgare), linden (Tilia vulgaris), nettle (Urtica dioical), rosehip (Fr.Rosa caninae), sage (Salvia officinalis) and senna tea (Cassia anqustifolia). Microwave digestion procedure was applied under optimized conditions for dissolution of medicinal herbs. Element concentrations in the medicinal herbs and their infusions were determined by FAAS and ICP-AES. The accuracy and precision were verified against a GBW 07605 Poplar leaves and Tea certified reference material. The mineral and trace element content of medicinal herbs and their infusions showed a wide variability. However, distribution of the elements in the infusions is not high and it is nil especially for Cd, Co, Cr and Pb.

On-line preconcentration/determination of lead in Ilex paraguariensis samples (mate tea) using polyurethane foam as filter and USN-ICP-OES.

The present paper proposes an on-line preconcentration procedure for lead determination in Ilex paraguariensis (St. Hilaire) samples by ultrasonic nebulization associated to inductively coupled plasma optical emission spectrometry (USN-ICP-OES). It is based on the precipitation of lead(II) ion on a minicolumn packed with polyurethane foam using 2-(5-bromo-2-pyridilazo)-5-diethylaminophenol (5-Br-PADAP) as precipitating reagent. The collected analyte precipitate was quantitatively eluted from the minicolumn with 20% (v/v) nitric acid. An enhancement factor of 225-fold was obtained (15 for USN and 15 for preconcentration). The detection limit (DL) value for the preconcentration of 10.0 ml of sample was 40.0 ng/l. The relative standard deviation (R.S.D.) was 3.0% for a Pb concentration of 1 microg/l, calculated from the peak heights obtained. The calibration graph using the preconcentration system for lead was linear with a correlation coefficient of 0.9997, at levels near the detection limits up to at least 100 microg/l. The preconcentration procedure was successfully applied to the determination of lead in mate tea samples.

Rheological characterization of a novel functional food: tomato juice with soy germ.

The rheological properties of tomato juice containing 1.5% soy germ were compared to plain tomato juice with and without soy protein isolate. This novel product was developed to provide a delivery system of carotenoids, soy protein, and significant isoflavone content without compromising the perceived juice characteristics of tomato product. Rheological tests depicted physical gel characteristics for all three products. Dynamic tests as a function of temperature showed that the stability and the compatibility between tomato juice and soy germ were higher as compared to soy protein isolate. The hydrophobic and electrostatic interactions between pectin and protein in the tomato soy protein isolate system were weakened as the temperature was increased. In the case of tomato juice with soy germ, the viscosity did not change during heating. The addition of soy germ increased the viscosity of tomato juice reinforcing the entire system without major qualitative effects on the rheological properties of plain tomato juice.
