Foods predictive of nutrient intake in Chinese diet in Taiwan: II. Vitamin A, vitamin B1, vitamin B2, vitamin C and calcium.

Dietary consumption data obtained by food weighing for 539 households in Taiwan in 1980-1981 were used to search for predictor foods of individual intake of several vitamins and calcium. Stepwise multiple regression analysis was carried out on food items that were univariately and significantly associated with nutrient intakes, to screen for the important predictors. Less than ten foods were enough to explain more than 90% of the interperson variation for vitamin A, vitamin B1, and vitamin B2. For vitamin C and calcium, 20 food items could explain only 87% of the variation. Salt, brown sugar, and soy bean sauce were selected among calcium predictors. The information on foods predictive of nutrient intake is useful in designing food frequency questionnaires and materials for nutrition education. Although this paper provides such information for Chinese living in Taiwan, some issues described (such as the need to assess spices) may have been overlooked and could be generalized to populations using stir-frying as a major cooking method.

Vitamin B2 (riboflavin) and a mixture of vitamin B2 and C affects MMC efficiency in aerated media under irradiation.

Vitamin B2 (Riboflavin) acts as a strong radiation protecting agent in Escherichia coli bacteria (AB1157) in aerated media. This ability is reinforced by the addition of vitamin C. Under the influence of gamma-radiation, vitamin B2 completely suppresses the cytostatic activity of mitomycin C (MMC). In the presence of both vitamins, B2 and C, MMC is converted from an efficient cytostatic to a rather strong radiation protecting agent. This effect opens a new pathway for specific protection of normal mammalian cells (with a high O2-content) under treatment with ionizing radiation.

Photochemical and photodynamic properties of vitamin B2--riboflavin and liposomes.

Ocular neovascular disease represents an important cause of blindness today. In this paper, it was used a model to evaluate the vaso-occlusive potential of photodynamic therapy with B2 vitamin. Neovascularization induced în an occular cornea consists of an easily accessible monolayer-like neovascular net within a transparent matrix. This fact allows studying the efficiency of occlusion în an isolated neovascular structure. This study is a requirement for the transport evaluation and photodynamic efficiency of this drug. Both riboflavin and the DPBF are embedded în the phospholipid bilayer. The quantum yield of DPBF photooxidation and riboflavin singlet oxygen generation are higher by comparison with water (13-35 s în liposomes and 0.4 s în water), due to the higher lifetime of singlet oxygen în liposomes and due to the special transport mechanism of B2 inside of liposomes. The photochemical behavior of riboflavin (Vitamin B2) aqueous solution and în unilamellar liposomes of dipalmitoyl phosphatidylcholine (DPPC) during the sensitized photooxidation of 1,3-diphenylisobenzofuran (DPBF) are discussed în this paper. Some structural aspects of DPPC liposomes, have been studied, too. The first step în the sequence of vesicle shape transformations, the spherical to polygonal shape transition, occurs în a very narrow temperature range, i.e., during the gel-to-liquid crystalline phase transition. At different temperatures (30,37-42 degrees C) could be seen the sequence for the vesicle form: spherical-polygonal-ellipsoidal, attributable to the lipid domain coexistence on the macroscopic structure of liposomes. The incorporation of B2 Vitamin eliminates the ellipsoidal form of DPPC, even at high temperature, because B2 has a very small molecule able to be encapsulated into DPPC vesicle. Also, the incorporation of B2 increase the DPPC diameter, all these observations being obtained by optical confocal microscopy.

The effect of light on the vitamin B2 and the vitamin A content of cheese.

Edam type cheese was exposed to sunlight at ambient temperature and to fluorescent light at 5 degrees C. The loss of vitamin B2 (riboflavin) and vitamin A was monitored in both the surface and inner layers of the cheese and the results compared with control samples kept in the dark. The loss of riboflavin when exposed to sunlight was shown to be primarily a surface effect but losses of vitamin A were similar throughout the cheese. When exposed to fluorescent light at 5 degrees C and monitored at intervals for 10 days the loss of riboflavin was still greatest at the surface but a trend to lower values than the control was evident throughout the cheese. Vitamin A losses followed a different pattern in both sunlight and fluorescent light. There was a heavy initial loss throughout the cheese. Under fluorescent light this was followed by a period in which further loss was mainly in the surface layer. Vacuum packaging reduced the loss of riboflavin but had no effect on the loss of vitamin A.

Anaphylaxis to riboflavin (vitamin B2).

BACKGROUND: Vitamin supplements are used more commonly in normal healthy subjects than in patients with vitamin deficiency. Thiamine (vitamin B,) is the vitamin that most frequently induces allergic reactions. To the best of our knowledge, no case of anaphylaxis to riboflavin (vitamin B2) has thus far been reported in the literature. OBJECTIVE: We describe a previously healthy 15-year-old boy in whom anaphylaxis developed several times after he drank one soft drink or took a single multivitamin tablet. This study was done to determine which of the many components found in the soft drink and vitamin tablet caused the anaphylactic reaction. METHODS: In an outpatient clinic with the availability of complete resuscitative procedures, we performed single-blind prick skin tests and intradermal skin tests on the patient with various pure vitamin components of the soft drink and the multivitamin tablet. Physiologic saline and histamine were used for negative and positive controls, respectively. RESULTS: Riboflavin, a component of both the soft drink and the vitamin tablet, produced positive reactions on intradermal skin tests in the patient. Positive reactions were not present in the normal control subjects. CONCLUSIONS: Riboflavin is a previously unreported cause of anaphylaxis. Free-form riboflavin may potentially be associated with an anaphylactic reaction. It is a vitamin widely used in many patients with chronic disease and in healthy subjects. Vitamin B2 must be considered as a cause of anaphylaxis.

[Metabolism of 25-hydroxyvitamin D3 in the kidney and nuclear receptors of 1,25-dihydroxyvitamin D3 in small intestine mucosa of rats with vitamin B2 deficiency].

Effect of vitamin B2 deficiency on metabolism, reception and biochemical functions of vitamin D was studied in young rats. Deficiency in vitamin B2 was shown to cause a moderate hypocalcemia as well as a decrease in the active transport of calcium in small intestine and in concentration of 25-OH D in blood serum, lowered formation of 24,25 (OH)2D3 in kidney slices and decreasing content of nuclear receptors for 1,25 (OH)2D3 (fre and bound in vivo) in small intestine mucose. After administration of cholecalciferol into the animals deficient in vitamins D and B2 within 24 hrs or 6 days before death restoration of the calcium metabolism parameters was retarded as a result of less distinct stimulation of I-hydroxylase and of low activity of 24-hydroxylase 25-OH D3 in kidney as well as due to a moderate increase in content of bound receptors of 1,25 (OH)2D3 in small intestine mucose and, apparently, because of reduced production of the proteins dependent on vitamin D in the tissue (Ca2+-ATPase and alkaline phosphatase). The data obtained suggest the possible importance in rickets of vitamin B2 deficiency mediated via its influence on metabolism and reception of vitamin D.
